Chifa reached Callao by ship
In 1849 the first Cantonese workers landed at the port of Callao. They brought the wok, the soy sauce and the habit of searing yesterday's rice over a very high flame.
Chifa came out of that encounter: Cantonese cooking made with what Peru grows. It is what gets cooked on this corner of La Perla, in the same wok, every day of the year.
